Cheese production cycle meets Virto-Cuccolini vibrating sieves more than once: both in the early stages with the screening of whey, and in the final stages of the by-products production.
It is the case of grated Parmigiano Reggiano, which after being reduced to small fine chips in the industrial grater – similarly to what happens in our kitchens – must be sieved to separate the coarser pieces of crust from the actual product. The vibration also contributes to crumble the grated cheese agglomerates and to make the product more fluid and homogeneous for the subsequent weighing and packaging operations.

In recent years, most of the dairies producing Parmigiano Reggiano or Grana Padano – given the proximity of Cuccolini headquarters from their places of origin – have inserted the C-Line circular vibrating sieves in their grated cheese packaging lines.
